FunniBonz Pulled Salmon Sandwich

We know you've had our famous Pulled Pork Sandwich. Maybe you've made it with the regular sauce or kicked it up to Spicy or Fiery Chipotle for some extra "wow!"  But we've got a great pulled recipe using FunniBonz Tangy Mustard sauce.  Give it a try. We are SURE you will love it!

FunniBonz Pulled Salmon Sandwich

Ingredients:
2-4 fresh Salmon fillets
1 jar FunniBonz Chicken and Steak Rub
1 jar FunniBonz Sweet & Tangy Mustard sauce
2 Tbsp sour cream
2 Tbsp Greek yogurt
1 tsp lemon juice
Dill
Salt
Pepper
Soft Sandwich rolls

Directions:
1. Pre-heat broiler.

2. Cut salmon fillets into slices and coat both sides with FunniBonz Chicken and Steak Seasoning.

3. Lay slices on a cookie sheet and place under the broiler.

4. Broil one side for about 6 minutes

5. Turn and broil the second side for 3 to 4 minutes until opaque.

6. Pull from oven and let cool.  Then gently crumble slices into large chunks in a bowl and place in refrigerator.  Let salmon cool for an additional 30 – 60 minutes.

7. For sauce: In a separate bowl, mix sour cream with Greek yogurt.  Add lemon juice, a sprinkle of dill and salt and pepper to taste.  Mix well and set aside.

8. Heat a few tablespoons of mustard sauce.  You only need enough to allow your salmon to hold together.  (If the salmon is sufficiently cool, it shouldn’t fall apart too easily when mixing.)  Gently fold the warm mustard sauce into the salmon, making sure to keep it fairly chunky.

9. Scoop salmon onto soft, fluffy roll.  Add a dollop of the sour cream sauce and garnish with additional dill.  Serve with your favorite side!

Enjoy!

Grilled Sausage with Bacon and FunniOnions

Want a quick, filling and delicious meal?  This is one of our favorites.  We recommend using a non-stick pan for the bacon/onions.

1) Brown a few strips of bacon.

2) Drain bacon on paper towel.

3) Add 1 small sliced onion to the bacon grease.

 4) Cook at medium-high until caramelized.

5) Turn fire down and add about 1/2 cup (or more to your liking) of your favorite FunniBonz sauce.
Here we used Original sauce.

6) Cook on medium until warmed through. Then turn to lowest temperature and let simmer.

 7) In a separate pan or on a grill, cook your sausage. (Original sauce is a great complement to spicy Italian sausage.  In contrast, Spicy and Chipotle sauces adds lots of flavor to mild sausages.)

 8) Turn sausages occasionally to get an even brown on all sides.

9) If cooking on the stove, you may want to cover with a pot lid to make sure insides are cooked through.  Do not poke holes in the skin as the natural juices will leak out and the sausage will become dry.

10) Place some bacon on the sausage bun.

11) Add your sausage.

12) Top with FunniOnions.

13) Serve with your favorite sides and beverage.  Enjoy!

Sausage and FunniBonz... Hmmmm!

While sitting at home holding that brand new jar of FunniBonz Barbeque Sauce, you may be wondering to yourself, "Hmmm... what new delicious, finger-licking recipe can I make to pair with this awesome sauce?"  Well, wonder no more!  First read this article in Georgia Trend Magazine about sausage-making - Southern-style - featuring our friend David L. Martin of Home Style Foods.  After that, we're sure something will come to you....

Barbeque Sausage and Peppers

Ingredients

1 pound Home Style Foods Southern Style Smoked Pork Sausage, sliced
1 large red bell pepper, cut into slices
1 large red onion, cut into slices
1 jar FunniBonz Barbeque Sauce
1/2 pound sliced provolone cheese
1 package steak sandwich rolls
Oil for cooking

Directions

1. Preheat about 2 tbsp oil in sauté pan.  Sauté sausage until just slightly pink in the middle.

2. Add peppers and onions to the pan and continue cooking until sausage is evenly browned and vegetables are tender.

3. Drain any excess oil and add about half a cup of your favorite flavor of FunniBonz Barbeque sauce (more if you prefer).  Combine until sauce is warmed through and ingredients are completely coated.

4. Put a couple slices of provolone cheese in the bottom of each steak roll.  Transfer sausage and peppers to steak roll, on top of cheese, which will melt from the heat of the ingredients.

5. Grab some napkins, a cold beer and enjoy!

Tip:  If you like it spicy, you can use Home Style Foods Hot Sausage or spice it up with FunniBonz Spicy or Fiery Chipotle sauces.  Or you can do both!  After all, it's your sandwich - it's your choice!
